What started as Konz Pizza has now evolved into Crust Lab Pizza, Pasta & Ice Cream—a bold new chapter in our journey of flavor and innovation.

The story began in 2014 when our Founder envisioned a fresh take on pizza. By the summer of 2015, the first food trailer hit the streets of Kelowna, BC, and quickly became a local sensation. After two successful seasons, the first franchise location opened in Edmonton, AB, in early 2017.

Built on a foundation of quality, creativity, and strong partnerships, the concept grew rapidly, expanding to over 20 locations from BC to Ontario. As we evolved, so did our vision. Today, under the leadership of Evole Brands, Konz Pizza has transformed into Crust Lab—a brand that goes beyond pizza to offer fresh pasta, handcrafted ice cream, and the same commitment to bold flavors and culinary creativity.

Our Founder honed their craft in Scotland in the 1990s, drawing inspiration from diverse cuisines and the UK’s emerging street food scene. A passion for reinventing familiar flavors led to the innovative recipes that define Crust Lab today. Fun fact—the Founder even cooked where the Queen used to have lunch!
